  1. In a bowl, mix warm water, honey/maple, and yeast. Let sit for 5–10 minutes until frothy.
  2. Add flour, salt, and oil (if using). Mix into a dough.
  3. Knead on a floured surface for 5–7 minutes until smooth.
  4. Cover and let rise for 1 hour (or until doubled).
  5. Shape into a loaf and place in a greased bread pan. Let rise again ~30 minutes.
  6. Bake at 375°F for 25–30 minutes.
  7. Let cool slightly. Slice. Toast. Top it however you want—but know you just woke up the kitchen.
