  • 1 tsp pure vanilla extract
  • Zest of 1 organic lemon (optional, but magical)

  • 1.5 cups homemade oat flour (just blended oats—organic + glyphosate-free if possible)
  • 1/2 tsp baking soda
  • 1 tsp aluminum-free baking powder
  • 1/4 tsp sea salt

Add-In:

  • 1 cup fresh or frozen blueberries (organic = ideal)
  • Optional: sprinkle of flax or hemp seeds

🍳 INSTRUCTIONS

  1. Preheat oven to 350°F. Grease or line muffin tin.
  2. In one bowl, whisk eggs, melted ghee/oil, honey/maple, kefir, vanilla, and lemon zest.
  3. In another bowl, combine all dry ingredients.
  4. Mix wet + dry gently—don’t overmix.
  5. Fold in blueberries.
  6. Scoop into muffin tin (makes 10–12).
  7. Bake 18–22 minutes or until golden and springy. Cool before demolishing.
