  • 1½ cups oat flour (blend oats till fine)
  • 1 tsp aluminum-free baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 tsp Ceylon cinnamon

  1. Preheat oven to 350°F (175°C). Line or grease a loaf pan.
  2. Mash bananas in a bowl until mostly smooth.

  4. Add oat flour, baking powder, baking soda, salt, and cinnamon. Stir until just combined.
  5. Fold in walnuts or chocolate chips, if using.
  6. Pour into loaf pan. Smooth top.
  7. Bake for 45–50 minutes, or until a toothpick comes out clean.
  8. Cool for 10–15 minutes before slicing (but no shame if you don’t wait).
