Ingredients â The Loaf
1½ cupscarrot pulp, lightly packed
2large eggs

cupmaple syrup or honey
½ cupcoconut sugar or brown sugar
½ cupavocado oil or melted coconut oil
½ cupunsweetened applesauce
1 tspvanilla extract
1 cupwhole wheat or spelt flour
ž cupalmond flour
1 tspbaking soda
½ tspbaking powder
1½ tspcinnamon
½ tspnutmeg
Âź tspground ginger
Âź tspsea salt
½ cupwalnuts, pecans, or raisins (optional)
Ingredients â The Frosting
8 ozorganic cream cheese, room temp
2½ tbspmaple syrup or raw honey
1 tspvanilla extract
pinchsea salt
optionalzest of ½ orange

Preheat & Prep
Preheat oven to 350°F (175°C). Line a loaf pan with parchment or lightly grease it.

Build the Wet Base
Whisk together eggs, oil, applesauce, maple syrup, coconut sugar, and vanilla until smooth. This is your foundation.

Add the Pulp
Stir in carrot pulp and fold evenly â this is where the magic lives.

Mix the Dry
In a separate bowl, combine flours, baking soda, baking powder, spices, and salt. Whisk to distribute evenly.

Combine & Load
Fold dry into wet until just combined. Don't overwork it. Add nuts or raisins if using. Pour into prepared pan.

Bake
Bake 45â55 minutes until a toothpick comes out mostly clean. A little moisture is fine. Overbaked is dry. Trust your nose.

Cool Completely
Let the loaf cool fully before frosting. Patience here is the whole game.

Make the Frosting
Beat cream cheese until fluffy. Add sweetener, vanilla, salt, and orange zest if using. Mix until smooth.

Frost & Serve
Spread frosting generously over the cooled loaf. Chill 20 minutes or serve immediately. Either way, you win.
